After the ceremony??? Reception all-inc? Los Cabos in Oct.07

Hi ladies.
We are planning a wedding for los cabos in Oct. 2007.
I know i want to have my ceremony on the beach at sunset, but what do i do for the reception? We haven't spoken to the wedding co-ordinator yet, and are wondering what some of you have done (those who have been married at an all-inclusive) after the ceremony? What are the usual options for food and drinks and possible venues and speeches and such? The agent told us that there is a $10/hr. cost for open bar. What's that all about??? We'll be at an all-inclusive. Isn't the food and drink included in the wedding too???
Please, if there are any ideas and or imput you can give us, please, we are looking for advice...
