Newbie to wed far south of Cancun-

Feeling kind of lost, because we know what we want but don't know what to do first. I've spent most of my energy trying to pick a place and lodging facilities, because I feel this is the most time sensitive. It has been very hard to decide not being able to see the places for ourselves and communicating by email is time consuming. any suggestions?
We want a low key, away from the city life, beach wedding that can accomodat 30-40 people.
By the way how do you minimize your guest lists with this type of wedding. Seems like everyone wants to go?!
Ever been to Tulum or farther south, that's what we've looked at so far.
Any info is helpful...

Have you thought about Isla Mujeres? We are getting married there in Oct. 2007
